Try different proteins & vegetables:

Fish
Try monkfish or Coley. Or even salmon. Alternatively, prawns are great option. You can also add a touch of lime juice for a subtle tang. Tip: Remember that fish & prawns cook very quickly. So add them right at the end, just long enough to cook. Serve immediately. -
Jackfruit
This is a great option if you're cutting down on meat. It works wonderfully with the roasted spices. -
Pulses
Use lentils or other pulses for a thick dhal-style curry, with the richness of coconut milk adding an extra layer of luxury.
Swap the coconut milk:

Grated coconut
Use grated fresh coconut for a drier curry. Makes a great filling for wraps and toasties. -
Coconut yoghurt
Creates a slightly more subtle coconut finish, with a slight tang.
Which fish works with Sri Lankan Curry?
Most white fish will work. For example monkfish, coley, sea bass. Salmon also works well. This curry is also amazing with prawns.
Serving Suggestions
You can serve Sri Lankan curry with:

Steamed rice – plain or with a bit of turmeric and cardamom.

Coconut sambal – a fresh chutney made with grated coconut, lime, chilli, and onion.

Pol roti – coconut flatbreads that are chewy and perfect for scooping up curry.
