Massaman is a Thai dish with peanuts and lemongrass.
If you've never tried Massaman curry, then it's a must. The biggest flavours are peanut, and lemongrass. Rich texture which is mild at first, with a bit of heat at the end. Not too much heat though...just enough.
I love discovering new dishes. I first had this Thai / Persion fusion at a friend’s party. I was struck by the delicious peanut & coconut combination. Delicious. Before I knew it, I was grabbing the recipe and working on blending the ingredients together. Now it’s one of the Spice Kits that's earned its place in my kitchen cupboard.
Especially recommend this one with beef, & for the slow cooker. Come home from work to the aroma of this scrumptious dish. Or swap for chunky veg like mushrooms, sweet potatoes.

You will need:
- 500g beef skirt*
- Two waxy potatoes (optional)
- 400ml can coconut milk (or add coconut milk powder from the options)

Traditionally, Massaman is made with beef and potatoes. But chicken massaman is a popular alternative. Or even fish.
If you're vegetarian / vegan, simply replace the meat with a combination of your favourite vegetables. Throw in some pulses as a source of protein. Just allow for different cooking times for your ingredients.
You're really only limited by your imagination.
